Crunchy Zucchini Fritters With Avocado Dill Dip (My Favorite Recipe)

Zucchini fritters with avocado dill dip

The fritter ingredients are:

  • salt to taste
  • pepper to taste
  • a clove of peeled and minced garlic
  • a tablespoon of lemon zest
  • a quarter of a cup of fresh oregano ditto
  • a quarter of a cup of gluten-free flour
  • two organic eggs
  • a quarter of a cup of fresh basil
  • a large zucchini (or two small ones)
  • a quarter of a teaspoon of onion powder
  • The dip ingredients are:
  • avocado dip base
  • half a cup of finely chopped fresh dill

Instructions:

Grate the zucchini using the large holes of the grater. Put it in a colander set in your sink and toss with some salt. After 10 minutes, dry out the zucchini on a clean towel. Then, put it in a large bowl and mix it with the eggs, basil, garlic, oregano, onion powder, pepper and salt. Slowly, add the flour, too.

Over medium heat, heat two tbsp of coconut oil in a large pan. Slowly drop two tbsp of the zucchini mixture in the pan. Repeat this, keeping fritters a few inches apart.

The fritters should be cooked until they get golden (around 2-3 minutes). Put the fritters into a plate, in a warm place. Add some more oil if necessary, and keep cooking the remaining zucchini mixture.

In case you want to add more veggies, you can include half a cup of chopped kale or spinach.

Cut the avocado in half, removing the seed. Take the meat with a spoon and place it in a bowl. Add all the other ingredients for the dill dip. Mix until smooth.
