Zucchini Fritter with Avocado Dill Dip
Zucchini works great with avocado, making this recipe super clean, simple and simple to do.
- 1/4 teaspoon onion powder
- 1/4 cup gluten-free flour
- 2 organic eggs/flax egg
- A tablespoon lemon zest
- 1/4 cup oregano ditto
- 1/4 cup fresh basil
- A garlic clove, peeled and minced
- One large or two smaller zucchinis
- 1/2 cup finely chopped fresh dill
- A ripe avocado
- 1/2 teaspoon onion powder
- 1/2 teaspoon Vegenaise
First, grate the zucchini on the big-hole side of the grater. Add salt and transfer the grated zucchini in a colander. Let them sit for 10 minutes. Then, use a clean towel to drain the zucchini of excess water.
Transfer to a large bowl and add onion powder, lemon zest, garlic, basil, oregano, egg, and seasoning. Mix until the contents even out and then add flour, slowly, so you avoid lumps in the mix.
In a large saucepan, add some olive or coconut oil and warm it up on medium heat. Add the mix to the oil (two tablespoons of mix per piece), making sure these do not stick to one another in the pan.
Cook for 2-3 minutes, until golden. Reduce the heat and turn the fritters on the side, and cook for additional 2-3 minutes.
